Fenghuang Sour Fish

People in Fenghuang (phoenix) town have a long history of consuming sour food. It is said that they lived in the remote and steep mountains from generation to generation where transportation was difficult. Therefore, fish, meat, vegetable and salt are scarce. To meet the needs of daily life, every family of Miao nationality uses jars to store sour fish, sour meat, pickles and other congener food.
